Pasta salad is a quick and easy meal that’s delicious and great for that party or potluck you’ve got coming up! The best part about pasta salad is that you can mix it up so many different ways with a variety of different veggies.
Rotini seems to be the go-to noodle when it comes to pasta salads. We throw in our favourite veggies, which make it super colourful and nutritious! Here’s a simple solution to whipping up a great side dish that is sure to be on everyone’s plate!
What You’ll Need:
454g of rotini pasta (about one package)
1 red pepper
1 large carrot, diced
1/2 red onion, diced
1/2 cup parsley, chopped
1/2 cup feta cheese
1 cup of broccoli, chopped1 tsp sea salt
3/4 cup Lemon Garlic Dressing
1. Cook your pasta according to the directions on the package. 2. While your pasta is cooking, start to prep the veggies to avoid wasting time. Dice all of the veggies and add them into a large mixing bowl. 3. Once the pasta is fully cooked, rinse it in cold water to stop the cooking process. This will also allow you to add it to the vegetables right away rather than waiting for it to cool. 4. Add the pasta in with the diced vegetables, then mix in the feta cheese, sea salt, and Lemon Garlic Dressing.
