Black Bean Burgers with Avocado Lime Dressing

Ingredients:

2 tbsp olive oil

1 small onion, chopped

3 cloves garlic

2 14oz cans of black beans, rinsed and drained

1/4 cup chopped red bell pepper

3 tbsp chopped parsley

3 tbsp chopped cilantro

1 tsp cumin

1 tsp chili powder

1 1/2 tsp sea salt

1/4 tsp black pepper

1/2 tbsp hot sauce

1 cup of breadcrumbs (regular or GF)

1 egg (or 1 Tbsp of flax seed mixed with 3 Tbsp of water for a Vegan option)

3 tbsp Avocado Lime Dressing

Directions:

1. Add chopped onion, garlic, red pepper, drained black beans, parsley, and cilantro in a food processor. Pulse until just combined. 2. Next, in a separate bowl mix egg (or alternative), Avocado Lime Dressing and spices. 3. Combine bean mix to egg mix and add breadcrumbs. Mix well until fully incorporated then form into 8oz patties. 4. Heat oil in a skillet, then pan fry burgers for 6 minutes on each side. If using an oven, place on parchment paper, cook on 375 degrees F for 20 minutes, flipping the burgers after 10 minutes. 5. While the patties are cooking, in a separate pan sauté sliced onion to use as a garnish. 6. Once the burgers are finished, add a tomato slice on your bottom bun, top with black bean burger, garnish with sautéed onions, a drizzle of Avocado Lime Dressing, lettuce, and finish with tortilla chips on top.
